Scape? What's a Scape?

It's the start of garlic season in Manitoba and there's tons of questions on Facebook about what garlic scapes are. This kind of scape is not a scapegoat, this scape is delicious in many different ways.
How to use scapes? Pesto, Relish , in stir fries, Pickled Scapes (this recipes is for beans, so just substitute the beans for scapes), garlic scape butter, deep fry them, garlic scape hummas, ....... There are hundreds of ways to use scapes.
If you're growing garlic and a newbie, the question is what is the scape, when do I cut it, and why do I cut it. The scape is a hard stem that does a curl. You want to cut when the stem does a curl and cut just above the first leaf. Why do you cut the scape? It's to allow all the energy to go to getting the bulb as big as possible. When you see the scape you'll notice a bulb, this bulb contains seeds. People in the garlic world call these bulbils.
